Gluten Free Scone Recipe

Ingredients:

  • 2 cups YesYouCan Plain Flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 1/2 cup dairy free milk (such as almond milk or coconut milk)
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup add-ins like dried fruit, chocolate chips, or nuts

Instructions:

  1. Preheat your oven to 220°C and line a baking sheet with parchment paper.

  2. In a mixing bowl, whisk together the YesYouCan Plain Flour, sugar, baking powder, and salt until well combined.

  3. Add the cold butter cubes to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

  4. Pour in the dairy free milk and vanilla extract. Mix gently until a soft dough forms. If desired, fold in any optional add-ins.

  5. Transfer the dough onto a lightly floured surface. Gently knead it a few times until it comes together.

  6. Flatten the dough into a circle or rectangle about 1 inch (2.5 cm) thick. Cut the dough into scone shapes using a knife or a round cutter.

  7. Place the scones onto the prepared baking sheet, leaving a little space between each one.

  8. Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown and cooked through.

  9. Remove from the oven and let the scones cool on a wire rack for a few minutes.

  10. Serve warm and enjoy your delicious gluten free scones!
